Three stupidly easy, no-frills ways to make vegan pudding

There are three foods that can take on the consistency of a chocolate pudding.12935552

Kinda like these Snack Pack puddings you probably remember eating as a kid, except without partially hydrogenated oils (which include trans fats) and with actual nutrients!

These foods might seem strange to use in a pudding, but when you add cocoa powder, it magically tastes delicious and hides the taste of the main ingredient.

All of these make 1-2 servings, depending on how hungry you are, and use almost all of the same ingredients. You can always jazz them up by adding cinnamon or whatever but for the sake of simplicity, these are basic-but-still-tasty vegan chocolate pudding recipes:

1. Avocado

Ingredients:

  • 1 large ripe avocado with the pit removed and flesh scooped out
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup pure maple syrup, agave or honey
  • 2 teaspoons vanilla extract
  • 3-4 tablespoons non-dairy milk

Directions:

Throw everything in a food processor and pulse.

2. Silken tofu

Ingredients:

  • 14 ounces soft silken tofu (usually the size of 1 package)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup pure maple syrup, agave or honey
  • 1 1/2 teaspoons vanilla extract

Directions:

Throw everything in a food processor and pulse.

3. Chia seeds

Ingredients:

  • 3 -4 tablespoons chia seeds
  • 1 tablespoon unsweetened cocoa powder
  • 2 teaspoons pure maple syrup, agave or honey
  • 1 teaspoon vanilla extract
  • 3/4 cup non-dairy milk

Directions:

Throw everything in a food processor and pulse. Transfer to a jar or bowl and let it chill in the fridge. It will keep getting thicker as it sits, so you can decide how long to let it sit depending on what consistency you want.
